Tender Tennessee Christmas

We go back to Tennessee Saturday and I can not wait. Here's a few things to looks forward to...
No more finals
Girls Christmas party with my Mom
Christmas shopping with Alex and Kenny
Playing with Nash
Peters sushi
Seeing old friends, especially my favorite Lindsay Elizabeth Huff.
Playing games with Mom, Dad and Kenny.
Talking to NINA on the phone on Christmas
Spending time with Mabbie and John
Getting Alex with no school for 2 weeks
Zero stress.

I can not wait. Both of our finals are done tomorrow at 2. Then our break begins. Tennessee here we come.

Walkin in a Winter Wonderland...

We love Christmas time. We decorated our tree (which looked a little better when we cut it down), we've been drinking apple cidar, looking at Christmas lights, and it's been snowing like crazy. We go to Tennessee on the 19th and can't wait to spend the holidays with my family.

Simple Lemon Herb Chicken

This is such an easy recipe. I always have a hard time finding what to make for dinner so here's something so easy and SO good!

Ingredients

  • 2 skinless, boneless chicken breast halves
  • 1 lemon
  • salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 pinch dried oregano
  • 2 sprigs fresh parsley, for garnish

Directions

  1. Cut lemon in half, and squeeze juice from 1/2 lemon on chicken. Season with salt to taste. Let sit while you heat oil in a small skillet over medium low heat.
  2. When oil is hot, put chicken in skillet. As you saute chicken, add juice from other 1/2 lemon, pepper to taste, and oregano. Saute for 5 to 10 minutes each side, or until juices run clear. Serve with parsley for garnish.
