Tender Tennessee Christmas

I can not wait. Both of our finals are done tomorrow at 2. Then our break begins. Tennessee here we come.

We love Christmas time. We decorated our tree (which looked a little better when we cut it down), we've been drinking apple cidar, looking at Christmas lights, and it's been snowing like crazy. We go to Tennessee on the 19th and can't wait to spend the holidays with my family.

Simple Lemon Herb Chicken

This is such an easy recipe. I always have a hard time finding what to make for dinner so here's something so easy and SO good!

Ingredients

  • 2 skinless, boneless chicken breast halves
  • 1 lemon
  • salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 pinch dried oregano
  • 2 sprigs fresh parsley, for garnish

Directions

  1. Cut lemon in half, and squeeze juice from 1/2 lemon on chicken. Season with salt to taste. Let sit while you heat oil in a small skillet over medium low heat.
  2. When oil is hot, put chicken in skillet. As you saute chicken, add juice from other 1/2 lemon, pepper to taste, and oregano. Saute for 5 to 10 minutes each side, or until juices run clear. Serve with parsley for garnish.

the Ragnar

This past weekend, we went down with Jared and Cheryl, for Alex and Cheryl to run in the Las Vegas Ragnar. They were on a relay team that consisted of 12 runners. It was a 24 hour race and a lot of excitement.
It consisted of:
-Barely Sleeping
-A teammate with exercise induced anaphylactic shock.
-Women talking about pooing off to the side of the race
-Married women flirting with an overweight EMT
-Cuddling with Cheryl
and...
-Knee and body pain
Doesn't it just sound like so much fun??
Both Cheryl and Alex did awesome, and hopefully will be able to walk again.

Wedding

It was the best day of my life. It was more than I could have asked for. My bouquet was full of huge sunflowers, my favorite flower in the whole world. We had a photobooth for the guest book, a candy and lemonade bar, a hot pair of cowboy boots, AMAZING centerpieces, and a beautiful cake that my dad made. It was the most perfect day because I had my perfect guy with me. I could not have asked for more.

Spudman 2009


On July 25, Alex participated in the Spudman Triathlon. It's an Olympic length triathlon so he swam a mile, biked 26 miles, and ran 6 and 1/2. He completed the race in 2 hrs and 29 min. Sadly I wasn't there to watch him but he did it with his 2 sisters and brother in law. Here are some pictures from his race!

Finally Together Again

After more than 2 months of long distance Alex and I finally got to see each other again. I flew out to Utah and stayed for 11 days and wow the time flew by. We had so much fun while we were together and can not wait for that to be the rest of our lives. I arrived in Las Vegas at 9 in the morning so we spent all Friday so excited just to be with each other. We went to a dinner that night for his cousins wedding and I met more of Alex's extended family (and he has a lot!). On Saturday, Alex went on a 22 mile bike ride with his sisters and brother in law getting ready for the triatholon they are doing this coming weekend. Then I got up and ran with Alex and wow was the altitude noticable on the lungs! I sucked. Afterwards we went and saw the petroglyphs from the indians at the gap about 10 miles from his house. The rest of the day we just hung out until his cousins wedding which was beautiful. After the wedding we went to dinner with all of Alex's family. Sunday we went to church and to his aunts house after where I met more family and got a card trick played on me which I could not understand at all. It took me forever to get it. Alex and I fished that night and I caught 3 baby fishy's. On Monday, we planned to go to Provo to do a few things, and so Alex's dad said Alex could drive the truck to Provo and he would take it to Logan with the cows in it while we did all the errands we had to do. I got to see what Alex has been doing all summer. I road the in a semi with him up to Delta where they loaded the cows and then up to Provo with all the cows in it! Never thought I'd do something like that! In Provo we saw our new apartment, ordered our wedding bands, and even bought a new kitchen table for our apartment (30$ gotta love it!) Around 9 at night we met Alex's dad at Cheryl and Jareds and then made our way back to Parowan. It was nearly impossible to find a resturant open that late and when we finally did we had the WORST server ever! But it was still a fun time. Tuesday threw Saturday we were at Lake Powell. On Sunday, I got to meet Alex's high school friend Trever, his wife, and even his baby girl. We just enjoyed each others company the rest of that day. Monday, I became a real cow girl. I helped Alex and his dad herd cattle on a real horse! It was funny and fun all at the same time. It even started raining on us while we were herding the cattle. "It was raining like a cow pissing on a flat rock"-Mark Evans. Hahaha. That night we had a barbeque in the mountains with Alex's parents and sister Cami. Alex also found a game that he could beat me in, Mario Kart. Tuesday Alex had to drive me to the airport. We were both really sad that we had to go back to the long distance thing. But on the bright side there are only 3 weeks until we get to see each other again. We can not wait to be together back in Nashville.

Powell 09


So before we were ever engaged one of the first things Alex had asked me was to go to Lake Powell with him. So we went to Lake Powell and had a nice little adventure. Mark (Alex's Dad), Cami (his youngest sister), Alex, and I set out on Tuesday to go from Wahweap Marina to Bullfrog Marina which is about 80 miles. Mark wanted to see Rainbow bridge and hole in the rock while we were on our way. The first day we got to see Rainbow bridge and camped really close to it. We woke up that morning and got some great wakeboarding and skiing in. Then we continued our journey to Bullfrog. We stopped at the hole in the rock, and Mark climbed up to the top of it while Cami, Alex, and I floated in the bay. When Mark came down, we tried to start the boat but couldn't. We got someone to jumpstart us and we were able to continue. No more than a mile from hole in the rock the boat died again. Alex and Mark were able to fix her one more time. Then around mile marker 73 we died again!!! This time she wasn't gonna start. We had to flag down boats for help but it didn't do much. All of our cellphones were dead and mine was the only one with service so I was able to get a quick "help" text out to Alex's sisters and mom. Finally a park ranger came but said he could only tow our boat to the nearest beach. So he towed the boat to the nearest beach where Mark stayed and Alex, Cami and I met up with Alex's aunt and uncle at there house boat 15 miles away. Alex and I joined his Uncle Dean and cousin Burke in going to get the boat and bringing it back. Since we had to tow the boat 15 miles going 9 miles an hour it took almost 2 hours just to tow the boat back to the house boat. The first 2 days at Lake Powell were quite the adventure. The rest of the time we just wakeboarded, surfed, and tubed. We played cards with Alex's cousins and I even went skinny dipping with Alex's sisters and cousins. It was a way fun time at the lake.

Back to my roots...

For the 4th of July weekend my Dad and I went back to where we both grew up and surprised my grandma and grandpa because they just got home from their mission. So Friday night we flew into Providence and drove to Massachusetts. We went to Norwell (where I lived when I was younger) Saturday morning and drove up to my Aunts and surprised my grandparents. They had no idea we were coming but we got to enjoy a fun weekend with them, my aunts and uncles and some cousins. We hung out, talked and enjoyed each others company for the weekend. It was a really fun time. My dad and I went and looked at our old house and different places we remember from living there. We ended the trip with our rental car being broken into! The passenger window was broken and my dads GPS. Although not such a fun experience, it didn't ruin our enjoyable weekend.
